Did some research before blinging out my fishing gear and it seems the stat caps are as follows;

Head: 75 perception / 4 gathering
Body: 75 gathering / 38 perception
Hands: 56 gathering / 4 perception
Legs: 38 gathering / 4 perception
Feet: 38 perception / 4 gathering
* these are all values on HQ.

Belt: 3 gathering / 16 perception
Rings: 3 gathering / 3 perception
Neck: 3 gathering / 3 perception
Wrist: 3 gathering / 3 perception
Earring: 3 gathering / 3 perception
*ilvl 55 accessories are likely 4/4 cap as the person who tested this all out stated he was too cheap to buy them…

If you do gem like this however it will put you at a final grand total of 307 gathering and 254 perception. More then whats required to catch the legendary megalodon.
